Grown in the sandy soil of Northern France, these dense, almost black beetroot are tender with a deep mineral flavour. The untreated, mineral-rich ground in the area is ideal for root vegetables, retaining essential water without compressing the plant. As a result, these thin-skinned beets grow ramrod straight. The grower François picks every day, choosing to store the beetroot in the ground rather than refrigerating them for months - a choice you can immediately taste in the freshness of their flavour.
