These flavoursome roots come straight from François, a grower in northern France. François’ labour-intensive method of growing is close to forcing, sowing the plants under steep mounds of native sandy-silt earth. Buried deep in the mineral-rich soil, the roots will emerge as exceptionally bright, round artichokes with an intensely concentrated flavour. Commercial growers would harvest the entire crop in one go and refrigerate for months, to maximise on soil productivity and minimise cost. Working almost alone, François picks on demand, preserving their crisp texture and unique flavour.
