Blackberries are the quintessential sign of the coming autumn in a British kitchen when the hedgerows are full of these deep, ripe fruits. Coming into season just as the night temperatures begin to drop, they share the same antioxidants and therefore a slightly similar flavour profile as blood oranges - purple anthocyanins - which also need dramatic fluctuations in day to night temperatures to ripen. Picked fully ripe, when their dark, almost fermented flesh is bursting through thin skins.
