Most courgettes come from intensive producers in Holland, grown hydroponically and selected for size, not flavour. These are straight from Lazio, a rich growing region around Rome. Grown direct in the soil and picked smaller than you might expect, the flavour belies the size. At this stage, their water content is low and the flesh is therefore firm with very few seeds. Minimally watered during their growing period, the concentration of natural sugars and nutrients is far higher than anything you'd find in a hydroponically-grown gourde.
