Sourced by our butcher HG Walter straight from a single farmer in northwestern France. The birds are entirely free range and fed on natural, grain-based diet, making for a leaner meat, finer texture and a richer flavour than anything you'd find on a supermarket shelf. Chefs look towards fowl during the autumn, when their dark meat and gamey flavour match autumn produce: blackberries, squash, grapes.
