Straight from Francesco at Natoora's farm in Sicily, where all plants are sown straight in volcanic soil and pollinated entirely by bees.  Flavour is at the heart of every decision taken here, from variety to growing method. From early summer all his aubergines are grown outdoors, from a seed selected for its ability to produce fruit with meaty, seedless flesh. Without the synthetic fertilisers to speed up the process, these incredible aubergines develop slowly and as a result have none of the bitterness of the hydroponic varieties you’ll find in the supermarket.
