Oysters are indigenous to British waters and have provided an invaluable source of high-quality protein to our diet for centuries. All our oysters come from Cornwall, renowned for its Helford oyster fishery that is operated within the river Fal, close to Falmouth. This ancient fishery is almost unique, it's one of the last places in Britain to rely solely on “oar or sail” to power its vessels. Everything here is tightly controlled: from who can fish down to the day of the week the boats go out. A minimum landing size also protects immature fish, thereby protecting the stock levels of oysters and jobs at the fishery for years to come. Our fishermen recommend waiting for October before putting Helford oysters on the menu when the waters have cooled and the oysters fatten up for winter.
