Renowned for their meaty flesh, full body and bittersweet flavour, San Marzano are the ultimate tomato for tomato sauce - even when raw, their intense aroma brings to mind passata. Grown in open fields by Bartolo on his tomato farm in southern Sicily, where the rich coastal soil and Mediterranean climate brings out the full flavour of these classic Italian staple. Each one is handpicked; Bartolo looks for a firm, bright red skin that tells him the fruit is fully mature. Minimal watering throughout the season means that the inner flesh is firm and has a rich concentration of flavour, undiluted by excess water.
