Whilst wild mushrooms can be found across the forests of central Europe, the most revered are the girolles from the Highlands. It's their ideal environment: mild and humid with intense bursts of rain that encourage sudden carpets of gold to appear through the undergrowth - 'flushes' as they're known in the industry. It takes a seasoned forager to know where to find them; picked from untrodden land where the soil is still fluffy and the mushrooms break through easily. Each one must be carefully hand-picked from the forest floor, without damaging their squat, meaty stalks. Valued by chefs across London for a good reason: these buttery, dense fungi are unlike any other wild mushroom on the market.
