All our fish and seafood comes from Cornwall via Wing of St Mawes – the Cornish Fishmerchant. Wing is a family run, specialist fishmonger who have supplied restaurants and Michelin-starred chefs for over forty years. Rob Wing started the business who is a former fisherman and chef, and is now an acknowledged seafood and sustainable fishing expert.
We have partnered with Wing not only because of the quality of their catch but also because we share their dedication to sustainable fishing. All their fish comes from local Cornish fishermen who work using low impact fishing methods that preserve the marine environment. Their local fishing boats are members of the Seafish Industry Authorities Responsible Fishing Scheme. Wing guide chefs towards seasonal fresh fish that is readily available without any danger to the species.
As a sponsor and a trustee of the National Lobster Hatchery, Wing donates 50p for every lobster bought, helping them to conserve and grow the lobster population and conserve our coastal marine biodiversity within Cornwall and the Isles of Scilly. They recycle 100% of the waste generated from crab picking (e.g. crab shells) for its calcium, which then mixed in with fertiliser to help soil regeneration. Currently, all other residues of fish waste is converted into biogas.
